  • ¼ cup grated Parmesan

  • A pinch of paprika

1. Cook the pasta

Bring a large pot of salted water to a boil.

Cook the macaroni until slightly firmer than you would normally eat it.

It will continue cooking in the oven, so avoid making it completely soft at this stage.

Drain well.

2. Make the roux

Melt the butter in a large saucepan over medium heat.

Add the flour and whisk continuously for about 1–2 minutes.

The mixture should become smooth and lightly fragrant.

3. Add the milk

Gradually whisk in the milk and evaporated milk.

Keep whisking as the mixture thickens.

Cook for approximately 4–6 minutes.

4. Season the sauce

Stir in the Dijon mustard, garlic powder, paprika and black pepper.

Taste carefully before adding salt because the cheese will contribute additional saltiness.

5. Add the cheese

Reduce the heat to low.

Add the Cheddar, Monterey Jack or Gruyère, and Parmesan gradually, stirring until each addition melts before adding the next.

The finished sauce should be smooth and creamy.

6. Combine

Add the drained pasta to the cheese sauce.

Stir gently until every piece is coated.

7. Prepare the topping

Mix the breadcrumbs, melted butter, Parmesan and paprika in a small bowl.

8. Assemble

Transfer the macaroni and cheese to a lightly greased baking dish.

Spread the breadcrumb mixture evenly across the top.

9. Bake

Bake at 190°C / 375°F for approximately 20–25 minutes, until bubbling around the edges and golden on top.

For a deeper golden crust, switch to the grill/broiler for the final 1–2 minutes, watching carefully.

10. Rest before serving

Allow the dish to stand for approximately 5–10 minutes before serving.

That short resting period helps the sauce settle while keeping the macaroni creamy.
