1 cup chicken stock or water
1 teaspoon dried thyme
1 teaspoon paprika
½ teaspoon black pepper
Salt, to taste
1 bell pepper, sliced
1 teaspoon dried mixed herbs
Fresh parsley or coriander, for serving
Step-by-Step Instructions
1. Season the chicken.
Pat the chicken dry and season generously with salt, paprika, black pepper and dried herbs.
2. Brown for extra flavour.
Heat the oil in a large heavy-based pot over medium-high heat. Brown the chicken for about 3–4 minutes per side. It does not need to cook through at this stage. Remove and set aside.
3. Build the flavour base.
Add the sliced onion and bell pepper to the same pot. Cook for 4–5 minutes until softened. Add the garlic and tomato paste and stir for another minute.
4. Add the tomatoes and stock.
Pour in the chopped tomatoes and chicken stock. Stir well, scraping up any browned bits from the bottom of the pot.
5. Return the chicken.
Place the chicken back into the sauce. Reduce the heat to low and cover the pot.
6. Let it cook slowly.
Simmer gently for about 1½–2 hours, or until the chicken is tender and cooked through. Stir occasionally and add a little water or stock if the sauce becomes too thick.
7. Finish and serve.
Taste and adjust the seasoning. Scatter fresh parsley or coriander over the top and serve hot with your favourite side.
