One-Pot Family Jollof Rice with Chicken
Few dishes make a family table feel quite as welcoming as a steaming pot of jollof rice. With its rich tomato base, fragrant spices and beautifully seasoned rice, jollof is perfect for a weekend meal when you want something comforting without spending the entire day in the kitchen.
This version keeps the method straightforward while leaving plenty of room for you to adjust the spice level and ingredients to suit your household.

Ingredients
3 cups long-grain parboiled rice
6 chicken drumsticks or thighs
4 large ripe tomatoes, chopped
2 red bell peppers, chopped
1–2 onions, roughly chopped
2–3 tablespoons tomato paste
3 tablespoons cooking oil
2–3 cups chicken stock
2 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon paprika
1 bay leaf
Salt to taste
Black pepper to taste
Fresh spring onions or parsley, for garnish
Step-by-Step Recipe
1. Prepare the chicken.
Season the chicken with salt, black pepper, paprika and a little thyme. Heat the oil in a large heavy-bottomed pot and brown the chicken on both sides. Remove and set aside.
2. Make the pepper-tomato blend.
Blend the tomatoes, red peppers and half of the onions until smooth. You can leave the mixture slightly chunky if you prefer a more rustic sauce.
3. Fry the aromatics.
Using the same pot, add the remaining sliced onion. Cook for several minutes until softened. Add the garlic and ginger and stir until fragrant.
4. Cook the tomato base.
Add the tomato paste and cook for 2–3 minutes. Pour in the blended tomato and pepper mixture. Add curry powder, thyme, paprika, bay leaf, salt and black pepper.
Allow the sauce to simmer uncovered for about 15–20 minutes, stirring occasionally. Cooking down the tomato mixture helps develop a deeper flavour.
5. Add the rice.
Wash the rice until the water runs mostly clear, then add it to the tomato sauce. Stir gently so the rice is coated evenly.
6. Add stock and chicken.
Pour in enough chicken stock to cook the rice without making it watery. Place the browned chicken on top.
7. Cover and cook.
Reduce the heat to low, cover the pot tightly and cook until the rice is tender. Avoid stirring too frequently, as excessive stirring can make the rice sticky.
If the rice needs more liquid before it is fully cooked, add a small amount of warm stock or water.
8. Rest before serving.
Once cooked, turn off the heat and leave the pot covered for 5–10 minutes. Fluff the rice gently with a fork, remove the bay leaf and garnish with spring onions or parsley.
Serve hot with your favourite vegetables, salad or fried plantain.
