Learn how to make crispy garlic-rosemary roast potatoes with a fluffy centre and golden exterior. An easy side for weekend and Sunday dinners.
Golden and crunchy on the outside, fluffy in the middle, and finished with garlic and rosemary for an irresistible weekend side dish.
🍽️ Your Daily Dish
Crispy Garlic-Rosemary Roast Potatoes
A great weekend dinner does not always need an elaborate main course.
Sometimes, the dish everyone remembers is the one sitting quietly on the side of the plate.
These roast potatoes are built around a simple goal: maximum crispiness with a soft, fluffy centre.
The secret isn't complicated. Start with the right potatoes, parboil them briefly, roughen their edges, then roast them in a properly heated pan.
The result is the kind of golden side dish that works with roast chicken, beef, fish, sausages, vegetarian mains or even a simple weekend breakfast.
💬 Today's Table Talk
Few foods create quite as much anticipation around a weekend table as a tray of freshly roasted potatoes.
You hear the crunch when someone cuts into one.
The centre is soft and steaming, while the outside has developed those deeply browned, crispy edges that make it difficult to stop at just one.
This recipe is especially useful when you're feeding family or friends because it requires inexpensive, familiar ingredients while still making the meal feel special.
And once you understand the technique, you can adapt it with different herbs and seasonings throughout the year.
🛒 Ingredients
Serves 4–6
1.5 kg potatoes
4 tbsp olive oil or vegetable oil
4 garlic cloves, lightly crushed
2 tbsp fresh rosemary, chopped
1 tsp dried thyme
1 tsp salt, plus more for boiling
½ tsp freshly ground black pepper
1 tbsp semolina or fine cornmeal, optional
Fresh parsley, optional
Best potato choices: Look for potatoes that become fluffy when cooked rather than waxy varieties.
👩🍳 Step-by-Step Instructions
1. Heat the oven
Preheat your oven to 220°C / 425°F.
Place a large roasting tray inside while the oven heats.
A hot tray helps the potatoes begin crisping immediately.
2. Prepare the potatoes
Peel the potatoes if desired and cut them into roughly equal-sized chunks.
Keeping the pieces similar in size helps them cook evenly.
3. Parboil
Place the potatoes in a large saucepan and cover them with cold water.
Add a generous pinch of salt.
Bring to a boil and cook for approximately 7–10 minutes, until the outside is beginning to soften while the centres remain firm.
Drain thoroughly.
4. Rough up the edges
Return the potatoes to the empty saucepan.
Place the lid on top and gently shake the pan for several seconds.
This creates rough, fluffy edges.
Those rough edges are exactly what you want—they create more surface area for browning and crisping.
5. Add the oil
Drizzle the potatoes with the oil and gently toss.
If using semolina or cornmeal, sprinkle it over the potatoes and toss again.
6. Roast
Carefully remove the hot roasting tray from the oven.
Add the potatoes in a single layer.
You should hear them sizzle.
Don't overcrowd the tray.
7. Add the herbs
Roast for approximately 25 minutes, then turn the potatoes.
Add the crushed garlic and rosemary.
Return the tray to the oven.
8. Finish roasting
Continue roasting for another 20–30 minutes, turning once more if necessary, until the potatoes are deeply golden and crisp.
9. Season and serve
Season immediately with salt and black pepper.
Add fresh parsley if desired.
Serve while hot.
🔄 Easy Ingredient Substitutions
No rosemary?
Use thyme, sage or a combination of fresh herbs.
Want a richer flavor?
Replace some of the oil with duck fat or another suitable cooking fat.
Don't eat garlic?
Simply leave it out and increase the herbs.
Want extra heat?
Add a pinch of chilli flakes or smoked paprika.
Cooking for a crowd?
Increase the potatoes, but use additional roasting trays rather than overcrowding one.
🔪 Preparation & Cooking Tips
The Hot Tray Matters
Putting potatoes onto a cold tray slows down the initial browning. Heating the tray first gives the potatoes a head start.
Don't Skip the Parboil
This is one of the most important steps.
Parboiling softens the outer layer so it can be roughed up before roasting, helping create the contrast between crispy exterior and fluffy interior.
Give Them Room
Potatoes need space around them.
If they're packed together, they release steam and can become soft rather than crisp.
Add Fresh Garlic Later
Garlic can burn during a long roast.
Adding it partway through cooking gives you its flavor without turning it bitter.
🏆 Kitchen Win
Save Your Potato Water
Don't automatically pour that starchy cooking water down the sink.
If you're making gravy, soup or a sauce at the same time, a small amount of properly handled potato cooking water can help add body and starch.
For this recipe, however, make sure you drain the potatoes thoroughly before roasting—excess water is the enemy of crispiness.
The bigger Kitchen Win: cook once, then use the same basic roast-potato technique with different seasonings throughout the year.
Try garlic and rosemary for a classic dinner, paprika and cumin for a spiced version, or lemon and oregano for a Mediterranean-style variation.
💡 Weekend Cooking Tip
Don't Keep Opening the Oven
Every time you open the oven door, heat escapes.
Give the potatoes enough time to develop a crust before checking them.
A good rule is to let them roast undisturbed for the first 20–25 minutes before turning them.
Once they have developed a golden underside, they'll release from the tray more easily.
🍽️ What to Serve With Them
These potatoes are flexible enough to accompany almost any weekend main.
Try them with:
Roast chicken
Roast beef
Grilled salmon
Baked fish
Sausages
Mushroom steaks
Lentil loaf
Vegetable Wellington
Fried or poached eggs
For a simple weekend dinner, add a large green salad and a bowl of seasonal vegetables.
