Ingredients
4 boneless, skinless chicken thighs
2 medium apples, cored and cut into wedges
1 tablespoon olive oil
1 tablespoon butter
3 garlic cloves, finely chopped
1 small onion, thinly sliced
2 tablespoons pure maple syrup
1 tablespoon Dijon mustard
¾ cup chicken stock
1 teaspoon fresh thyme leaves, plus extra for serving
½ teaspoon dried sage or 1 teaspoon fresh sage, chopped
½ teaspoon smoked or sweet paprika
Salt and freshly ground black pepper, to taste
1 teaspoon apple cider vinegar or fresh lemon juice
Step-by-Step Instructions
1. Season the chicken.
Pat the chicken thighs dry with paper towels. Season both sides with salt, black pepper and paprika.
2. Brown the chicken.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4–5 minutes on each side, or until deeply golden. Transfer the chicken to a plate.
3. Cook the apples and onion.
Reduce the heat to medium. Add the butter, followed by the sliced onion and apple wedges. Cook for approximately 4 minutes, turning the apples gently so they develop some colour without becoming mushy.
4. Add the garlic and herbs.
Stir in the garlic, thyme and sage. Cook for about 30 seconds, just until fragrant.
5. Make the maple-mustard sauce.
Mix the maple syrup, Dijon mustard and chicken stock together. Pour the mixture into the skillet, scraping the bottom gently with a wooden spoon to loosen the browned bits.
6. Return the chicken.
Place the chicken back into the skillet. Reduce the heat to medium-low, cover loosely and simmer for 10–12 minutes, or until the chicken is cooked through.
For food safety, chicken should reach an internal temperature of 165°F/74°C in the thickest part.
7. Balance the flavour.
Stir in the apple cider vinegar or lemon juice. Taste the sauce and adjust the seasoning with additional salt and pepper if needed.
8. Finish and serve.
Spoon the maple-herb sauce over the chicken and apples. Finish with fresh thyme and serve immediately.

No chicken thighs?
Chicken breasts can work, but reduce the cooking time and monitor them carefully because they can dry out more quickly.
No maple syrup?
Use honey instead. The flavour will be slightly different but still complements the apples beautifully.
No Dijon mustard?
Wholegrain mustard is an excellent alternative.
Prefer pork?
Boneless pork chops can be used in place of chicken. Adjust the cooking time according to thickness and check that the meat reaches a safe internal temperature.
No fresh apples?
Firm pears can be substituted. Choose varieties that hold their shape when cooked.
