One-Pot Creamy Tomato Basil Pasta
There are weekends when you want to cook something that feels comforting and homemade—but you don't necessarily want a sink full of dishes afterward.
That's where a good one-pot pasta earns its place.
This creamy tomato basil pasta combines familiar ingredients into a rich, silky sauce that clings to every strand of pasta. Tomatoes bring acidity and sweetness, garlic adds depth, fresh basil provides a bright finish, and Parmesan gives the sauce its savoury richness.
Best of all, the pasta cooks directly in the sauce, allowing the starch released during cooking to help create a naturally thicker and creamier texture.
It is the kind of dinner that works equally well for a quiet Saturday evening, a casual Sunday family meal or an informal dinner with friends.
💬 Today's Table Talk
Weekend cooking does not have to involve an elaborate recipe.
Sometimes, the most satisfying meals come from taking a few everyday ingredients and giving them enough time and attention to develop their flavour.
This pasta is built around that idea.
You begin by gently cooking the aromatics, add tomatoes and stock, then allow the pasta to cook in the same pot. As it simmers, the pasta releases starch into the liquid, helping transform the tomato mixture into a sauce.
A small amount of cream adds richness without turning the dish into an overly heavy meal.
And because everything happens in one pot, cleanup is simple.
🍝 Creamy Tomato Basil Pasta Recipe
Serves: 4
Prep time: 10 minutes
Cooking time: 25 minutes
Total time: About 35 minutes
Ingredients
12 oz (340 g) pasta, such as penne, rigatoni or spaghetti
1 tablespoon olive oil
1 tablespoon butter
1 small yellow onion, finely chopped
3–4 garlic cloves, minced
1 can (14 oz/400 g) crushed tomatoes
3 cups vegetable or chicken stock
½ cup heavy/double cream
½ teaspoon dried oregano
½ teaspoon Italian seasoning
½ teaspoon red pepper flakes, optional
Salt and freshly ground black pepper
½ cup freshly grated Parmesan
½ cup fresh basil leaves, roughly torn
Extra Parmesan and basil for serving
Step 1: Build the flavour base
Heat the olive oil and butter in a large, deep skillet or Dutch oven over medium heat.
Add the onion and cook for approximately 3–4 minutes, stirring occasionally, until softened.
Add the garlic and cook for another 30 seconds.
Be careful not to brown or burn the garlic.
Step 2: Add the tomatoes
Pour in the crushed tomatoes.
Add the oregano, Italian seasoning and red pepper flakes if using.
Season lightly with salt and black pepper.
Stir everything together and allow it to cook for about 2 minutes.
Step 3: Add the stock and pasta
Pour in the stock and add the uncooked pasta.
Stir well so the pasta is submerged as much as possible.
Bring the mixture to a gentle boil, then reduce the heat to medium-low.
Step 4: Cook the pasta
Simmer uncovered, stirring frequently, for approximately 10–14 minutes, depending on the pasta you're using.
Keep an eye on the liquid.
If the pasta appears to be drying out before it is tender, add a small splash of hot stock or water.
Step 5: Make it creamy
When the pasta is almost cooked, stir in the cream.
Continue cooking for another 2–3 minutes until the pasta is tender and the sauce has thickened.
Step 6: Add Parmesan
Turn the heat to low.
Stir in the grated Parmesan until melted into the sauce.
Taste and adjust the seasoning.
Step 7: Finish with basil
Remove the pot from the heat and gently fold through the fresh basil.
Allow the pasta to sit for 1–2 minutes before serving.
Top each serving with additional Parmesan and fresh basil.
🔄 Easy Ingredient Substitutions
No heavy cream?
Use half-and-half, single cream or evaporated milk for a lighter sauce.
Want a vegetarian version?
Use vegetable stock instead of chicken stock and check that your Parmesan is suitable for your dietary preference.
No Parmesan?
Try Pecorino Romano or another hard, strongly flavoured cheese.
Prefer whole grains?
Use whole-wheat pasta. You may need slightly more liquid and a little additional cooking time.
Need it dairy-free?
Use dairy-free butter, a suitable plant-based cream and a dairy-free Parmesan alternative.
Want more vegetables?
Add spinach, sliced mushrooms, zucchini, bell peppers or peas.
Want protein?
Add cooked chicken, shrimp, white beans or chickpeas near the end of cooking.
🥦 Make It More Balanced
Pasta can easily become the centrepiece of a complete weekend dinner when you pair it with vegetables and a suitable protein.
Try serving it with:
Roasted broccoli
Garlic green beans
A simple rocket/arugula salad
Roasted courgette/zucchini
Grilled chicken
White beans
Garlic bread and a fresh salad
For a lighter meal, increase the vegetables and use a smaller pasta portion.
For a heartier weekend dinner, add grilled chicken or roasted vegetables and serve with crusty bread.
🏆 Kitchen Win: Save Some Pasta Water
Before draining or finishing your pasta, reserve a cup of the cooking liquid.
Why?
Pasta water contains starch, which can help loosen a thick sauce while also helping the sauce cling to the pasta.
Even though this particular recipe cooks the pasta directly in the sauce, the same principle is useful whenever you're making pasta separately.
If your sauce becomes too thick, add the reserved water one tablespoon at a time, stirring between additions.
Kitchen Win: A little starchy pasta water can turn a sauce that feels too thick into one that is smooth and glossy.
💡 Weekend Cooking Tip: Grate Your Cheese Fresh
Pre-grated Parmesan can be convenient, but freshly grated cheese generally melts more smoothly into sauces.
For this recipe, grate the Parmesan while the pasta is cooking.
Then, when the pasta is ready, you can remove the pot from the heat and stir the cheese through immediately.
This also gives you better control over the amount of cheese you're adding.
Extra tip: Keep the heat low when adding Parmesan. Excessive heat can make cheese-based sauces become grainy.
🍅 Simple Ways to Change the Recipe
Once you've made the basic version, you can take it in several directions.
Spicy Tomato Pasta
Add extra red pepper flakes and a pinch of chilli powder.
Creamy Mushroom Pasta
Sauté sliced mushrooms with the onion before adding the tomatoes.
Chicken Tomato Pasta
Add cooked shredded or sliced chicken during the final few minutes.
Spinach Tomato Pasta
Stir several handfuls of fresh spinach into the finished pasta until wilted.
Mediterranean Style
Add olives, roasted peppers and a little crumbled feta.
Extra-Garlicky
Add another clove or two of garlic and finish with chopped parsley.
🍽️ Why One-Pot Cooking Works So Well on Weekends
One-pot meals have a practical advantage that becomes particularly noticeable when you're cooking for several people.
You can:
Reduce cleanup: One main cooking vessel means fewer dishes.
Build flavour gradually: Aromatics, tomatoes, stock and pasta cook together.
Control the texture: You can adjust the sauce as it cooks.
Adapt easily: Vegetables and proteins can be added according to what you have available.
Serve straight from the pot: Put the skillet or Dutch oven on the table and let everyone serve themselves.
That makes this style of cooking particularly useful when the goal is not simply to produce dinner, but to enjoy the process.
