🛒 Ingredients

  • 400 g / 14 oz pasta

  • 500 g / 1.1 lb boneless chicken breast or thighs, sliced

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 3 garlic cloves, minced

  • 250 g / 9 oz mushrooms, sliced

  • 150 g / 5 oz baby spinach

  • 300 ml / 1¼ cups milk

  • 150 g / ⅔ cup plain Greek yogurt

  • 60 g / ½ cup grated Parmesan

  • 1 tsp Italian seasoning

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • Salt, to taste

  • 100 ml / about ⅓ cup reserved pasta water

  • Fresh parsley or basil, optional

  • Lemon zest, optional

👩‍🍳 Step-by-Step

1. Cook the pasta.
Boil the pasta in salted water according to the packet directions. Before draining, reserve about 100 ml of the cooking water.

2. Season the chicken.
Toss the chicken with Italian seasoning, smoked paprika, black pepper and a little salt.

3. Brown the chicken.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden and cooked through. Transfer it to a plate.

4. Build the vegetable base.
Add the onion and mushrooms to the same skillet. Cook for 5–7 minutes until softened and lightly browned.

Add the garlic and cook for another 30 seconds.

5. Create the lighter creamy sauce.
Reduce the heat to low. Pour in the milk and stir.

Add the Parmesan and stir until incorporated.

Take the pan off the heat for a moment, then stir in the Greek yogurt.

Kitchen caution: Don't add cold yogurt to a fiercely boiling sauce. Gentle heat helps prevent it from separating.

6. Bring everything together.
Return the chicken to the skillet and add the spinach. Stir until the spinach wilts.

Add the cooked pasta and toss everything together.

7. Loosen the sauce.
Add a little reserved pasta water at a time until the sauce reaches your preferred consistency.

8. Finish.
Taste and adjust the seasoning. Add fresh herbs and a little lemon zest if desired.

Serve immediately.

Swap heavy cream for Greek yogurt
