Make “food safety” part of your healthy-eating routine—not just an afterthought.
A healthy diet is not only about calories, vitamins or whether a food is labelled “organic.” What happens to food before it reaches your plate also matters.
Buy food from reputable sellers, keep perishable foods properly refrigerated, separate raw and cooked foods, wash fresh produce under running water, and follow food-safety instructions on packaging.
When buying grains, nuts, spices or other foods that can develop mould, pay attention to storage conditions. Do not eat visibly mouldy foods simply because the affected portion can be removed. Some mycotoxins can remain in food even after processing.
And when cooking, use cookware and food containers that are specifically designed for the intended temperature and purpose. Heating can increase the migration of some substances from plastic food-contact materials into food.
Small decisions repeated every day can become powerful health protection.
🌿 Healthy Living Spotlight
Your health is not controlled by one meal, one ingredient or one chemical exposure.
Cancer is a complex group of diseases. Age, genetics, infections, environmental exposures and lifestyle factors can all play a role. WHO identifies tobacco smoke, alcohol, aflatoxin and arsenic among established chemical carcinogenic exposures, while other important risks include certain infections, radiation and environmental factors.
That means we should avoid two extremes.
We should not assume that every disease is caused by something we ate yesterday.
But we should also not become careless about what enters our food supply.
A healthier food system requires everyone to take responsibility: regulators who enforce standards, manufacturers who make safe products, farmers and processors who protect food from contamination, retailers who store food properly—and consumers who make informed choices.
🩺 Today's Health Focus
We are the food system. And that means we have a responsibility.
We are quick to ask:
“Why are cancer and other diseases increasing?”
But perhaps we should ask a harder question:
“What are we putting into our bodies—and what are we allowing to happen to the food we sell, buy, prepare and eat?”
We are the people.
We are the farmers.
We are the manufacturers.
We are the retailers.
We are the sellers.
We are the buyers.
We are the people working in government.
We are the people working in hospitals.
And we are the people preparing dinner at home.
Food safety therefore cannot be somebody else's problem.
Unsafe food can contain bacteria, viruses, parasites or chemical contaminants. According to WHO's latest estimates, unsafe food causes around 866 million illnesses and 1.52 million deaths globally each year. Chemical hazards in food can contribute to both acute poisoning and longer-term diseases, including cancer.
But there is an important distinction.
Unsafe food is not synonymous with cancer.
Cancer does not have one single cause. And seeing more cancer diagnoses does not automatically prove that food contamination is responsible.
What the evidence does tell us is that some dietary and environmental exposures can increase disease risk—and that preventing avoidable exposures is worth taking seriously.
💬 Health Check
So, are we really “eating ourselves sick”?
Sometimes the answer is more complicated than a viral social-media post suggests.
Food can become unsafe through biological contamination, chemical contamination, poor storage, environmental pollution, inappropriate processing or unsafe food handling.
Some contaminants occur naturally.
For example, moulds can produce mycotoxins, which can contaminate cereals, nuts, spices and other foods. Aflatoxins are particularly important because long-term exposure to aflatoxin B1 can cause liver cancer, with the risk especially important in people who also have hepatitis B infection.
Other contaminants can enter food through environmental pollution or processing.
WHO identifies substances including inorganic arsenic and lead as important chemical hazards in food.
And then there is another issue that deserves more attention:
what food touches before we eat it.
🍌 What about bananas being treated with chemicals to ripen them?
This is an area where online claims can easily get ahead of the evidence.
Commercial fruit ripening is not automatically dangerous. Different fruits can be ripened using controlled and regulated processes, and ethylene is a natural plant hormone involved in fruit ripening.
The health concern arises when food is exposed to unapproved, inappropriate or contaminated chemicals, or when substances are used in ways that violate food-safety requirements.
Therefore, consumers should be cautious about unexplained chemical odours, damaged produce or fruit sold under suspicious conditions—but it would be scientifically wrong to say:
“Chemically ripened bananas cause cancer.”
There isn't sufficient evidence to make that blanket claim.
The better question is:
Was the substance legally permitted, correctly applied and used according to food-safety requirements?
That is a question for food regulators, producers and sellers.
🫘 What about beans that smell like kerosene or chemicals?
A strong petroleum-like or solvent-like odour in food should not simply be ignored.
Food can acquire undesirable chemical contamination through inappropriate storage, contact with chemicals, environmental contamination or other routes.
But again, smell alone cannot tell you exactly what chemical is present—or whether it is carcinogenic.
If beans or another food have an unusual chemical or petroleum smell, the safest practical response is not to eat them and not to try to “wash the chemical away.”
Keep the packaging or a sample where appropriate and report suspected contamination to the relevant food-safety authority or retailer.
This is particularly important because some chemical contaminants cannot be detected reliably by sight, smell or taste.
🫒 What about adding dye to palm oil?
Colour is not a reliable test of food safety.
Palm oil naturally has colour, and food colouring itself is not automatically dangerous. Some food colours are permitted for specific uses and under regulatory limits.
The problem is the use of an unauthorised substance, an unsafe concentration or a chemical that was never intended for food.
WHO specifically highlights food adulteration as one possible route for chemical contamination—for example, lead chromate has been used illegally to alter the colour of spices.
So the lesson isn't:
“All coloured food is dangerous.”
The lesson is:
Never assume that a brighter colour means better quality—and never use industrial or non-food-grade chemicals to change food's appearance.
🍌 And what about frying plantains with plastic or nylon?
This deserves particular attention.
Plastic is not one single substance. Different plastics contain different polymers, additives and other chemicals, and some are specifically manufactured for particular food-contact applications.
However, food-contact materials can release substances into food, a process known as migration. Research has demonstrated that migration can occur from plastic food-contact materials and that heating can affect the transfer of substances.
That does not mean that every plastic container is toxic or that every meal exposed to plastic causes cancer.
But deliberately placing ordinary plastic or nylon in hot cooking oil is a practice consumers should avoid unless the material is specifically designed, tested and approved for that exact high-temperature food-contact use.
The safer choice is simple: use cookware intended for cooking rather than improvised plastic materials.
This is one situation where “we have always done it this way” is not a sufficient food-safety argument.
🧪 Why chemical contamination deserves attention
Our bodies are exposed to many substances every day.
Most exposures do not cause cancer.
But some chemicals are established carcinogens, and the risk depends on factors such as the substance, dose, duration and route of exposure.
WHO notes that cancer develops through a complex, multistage process involving genetic changes and interactions between genetic factors and external agents. Recognised carcinogenic exposures include tobacco smoke, alcohol, aflatoxin and arsenic, among others.
This is why responsible health information should avoid saying:
“Chemical = cancer.”
The scientifically accurate message is:
Some chemicals can increase disease risk, so unnecessary and preventable exposure should be reduced.
🍲 The bigger problem may be bigger than food contamination
When discussing rising rates of cancer and chronic disease, we should not focus exclusively on alleged food adulteration.
There are much better-established risk factors.
Tobacco remains one of the strongest preventable causes of cancer.
Alcohol increases the risk of several cancers, and reducing alcohol consumption reduces risk.
Excess body weight is associated with an increased risk of several cancers.
Physical activity is also important. Regular activity is associated with lower risks of several cancers, including cancers of the breast, colon, endometrium, kidney, lung and stomach.
And diet matters—not because there is one magical “anti-cancer food,” but because overall dietary patterns influence body weight, metabolic health and exposure to certain dietary risks.
A healthy eating pattern generally means eating a variety of vegetables, fruits, whole grains, beans and other nutritious foods while limiting highly processed foods, excess added sugars, saturated fats and sodium.
🥦 What should we actually eat?
Forget the idea that one expensive superfood will protect you from disease.
Build meals around ordinary, nutritious foods.
Choose more often:
Vegetables of different colours
Whole fruits
Beans, peas and lentils
Whole grains
Nuts and seeds where appropriate
Fish and other nutritious protein sources
Healthy unsaturated fats
Adequate water
Limit:
Tobacco in all forms
Excess alcohol
Highly processed foods
Excess added sugars
Excess sodium
Large amounts of processed meat
Foods that appear contaminated, spoiled or improperly stored
A healthy diet does not have to be expensive or exotic.
Beans, vegetables, fruits, whole grains and other minimally processed foods can form the foundation of nutritious meals.
🛒 What consumers can do
You don't need a laboratory in your kitchen to make safer food choices.
1. Buy from trustworthy sources
Choose retailers and suppliers who appear to follow appropriate hygiene and storage practices.
2. Be suspicious of unexplained chemical smells
If food smells strongly of fuel, solvent, detergent or another chemical substance, don't take the risk.
3. Don't rely on appearance alone
A beautiful colour does not guarantee safety.
Likewise, normal-looking food isn't necessarily free from contamination.
4. Store food correctly
Warm, damp and humid conditions can encourage mould growth and mycotoxin contamination in susceptible foods.
5. Don't use inappropriate plastics for cooking
Use cookware and containers designed for the temperature and cooking method involved.
6. Wash fresh produce
Rinse fresh fruits and vegetables under running water before eating or preparing them. Washing does not remove every chemical contaminant, but it is an important part of ordinary food hygiene.
7. Don't cut mould off and assume everything is safe
Some moulds can produce toxins that are not simply eliminated by removing the visible mould.
8. Report suspicious food
Food safety is a shared responsibility. If you believe food has been adulterated or contaminated, report it through the appropriate food-safety authority in your country rather than simply posting an accusation online.
🏪 Sellers and manufacturers have responsibilities too
Consumers cannot solve a food-safety problem alone.
If a seller knowingly adds an unauthorised chemical to food, uses unsuitable materials in food preparation or deliberately adulterates products, the consumer is not the only person responsible for the resulting risk.
Food producers, processors, retailers and regulators all have roles.
WHO describes food safety as a shared responsibility requiring cooperation among governments, producers and consumers.
That principle matters everywhere—from Lagos to London, Toronto to Sydney, New York to Berlin and Dublin.
Different countries have different food regulations, but the fundamental principle is universal:
Food should be safe before it reaches the consumer.
🩺 What are the warning signs you shouldn't ignore?
Food contamination can cause symptoms such as nausea, vomiting, abdominal pain and diarrhoea, particularly when the cause is an infectious foodborne illness.
Seek medical attention when symptoms are severe, persistent or accompanied by signs such as significant dehydration, bloody diarrhoea, severe abdominal pain, confusion or difficulty breathing.
For cancer, there is no single symptom that means “you have cancer.”
But unexplained or persistent changes—such as unusual bleeding, an unexplained lump, unexplained weight loss, persistent changes in bowel or bladder habits, a cough that does not go away, or other continuing symptoms—deserve medical assessment.
Don't diagnose yourself from a social-media post.
A healthcare professional can determine whether symptoms require testing.
And don't wait for symptoms before thinking about prevention. Cancer screening is designed to detect certain cancers early and, in some cases, identify changes before cancer develops. Screening recommendations vary according to age, sex, personal risk and country.

Build a “safer plate” habit
At your next meal, ask yourself five questions:
1. Where did this food come from?
2. Has it been stored properly?
3. Does it look or smell unusually contaminated?
4. Am I using a food-safe material to prepare it?
5. Is this meal part of a balanced diet—or is it mostly highly processed food?
You don't need to become afraid of food.
You need to become informed about food.
🧠 Did You Know?
Food safety and cancer prevention overlap—but they are not the same thing.
WHO identifies aflatoxins as important food contaminants because long-term exposure to aflatoxin B1 can cause liver cancer. Aflatoxins can contaminate foods including groundnuts, tree nuts, cereals and other crops, particularly when conditions favour mould growth.
At the same time, many major cancer risks have nothing to do with food adulteration.
Tobacco, alcohol, excess body weight, physical inactivity, certain infections and environmental exposures all contribute to cancer risk.
So if we genuinely want to reduce cancer and other chronic diseases, we need a whole-system approach, not a single villain.
🌍 We Need to Stop Pointing Fingers and Start Taking Responsibility
This is perhaps the most uncomfortable part.
We are the food system.
We are the people manufacturing the products.
We are the people transporting them.
We are the people displaying them in markets.
We are the people buying them.
We are the people cooking them.
We are the people feeding them to our children.
And we are the people making decisions about public health.
That means food safety cannot be reduced to:
“Government should do something.”
Government absolutely has a responsibility.
But so do manufacturers.
So do retailers.
So do food handlers.
So do consumers.
And so do communities.
The goal isn't to create fear around food.
The goal is to create better food systems, better regulation, better consumer awareness and better everyday choices.
Because healthy living isn't simply about asking:
“What can I eat to live longer?”
Sometimes we should also ask:
“What should never have been allowed onto my plate in the first place?”
