The recipe is flexible, too. Use chicken thighs, drumsticks, or boneless chicken pieces. Fresh or frozen vegetables work equally well, making this a useful recipe for clearing out the refrigerator.

🛒 Ingredients
500g chicken thighs or boneless chicken pieces
2 cups long-grain rice, rinsed
2 tablespoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1 medium carrot, diced
1 sweet pepper, chopped
1 cup green peas, fresh or frozen
1 teaspoon curry powder
1 teaspoon paprika
½ teaspoon dried thyme
1 stock cube or 1 teaspoon seasoning powder
3½ cups chicken stock or water
Salt and black pepper, to taste
1 tablespoon chopped spring onion or parsley, optional

One-pot cooking changes that.
This chicken and rice recipe keeps the process straightforward: brown the chicken, build the flavour, add the rice and liquid, then let everything cook together. You get a complete meal with less supervision and much less washing up.
👩🍳 Easy-to-Follow Instructions
1. Prepare the chicken.
Pat the chicken dry and season lightly with salt, black pepper, paprika, and curry powder.
Heat the oil in a large heavy-bottomed pot over medium-high heat. Add the chicken and brown for about 3–4 minutes per side. It does not need to be fully cooked yet.
Remove the chicken and set it aside.
2. Build your flavour base.
Using the same pot, add the chopped onion and carrot. Cook for 2–3 minutes until the onion begins to soften.
Add the garlic, sweet pepper, curry powder, paprika, and thyme. Stir for about 30 seconds.
3. Add the rice.
Stir in the rinsed rice and allow it to cook with the vegetables for about 1 minute. This quick step helps the grains absorb some of the seasoning.
4. Return the chicken.
Pour in the chicken stock or water and add the stock cube or seasoning powder.
Place the chicken back into the pot. Bring everything to a gentle boil.
5. Cover and cook.
Reduce the heat to low, cover tightly, and simmer for about 18–20 minutes, or until the rice is tender and the chicken is completely cooked through.
Avoid lifting the lid repeatedly. The trapped steam helps the rice cook evenly.
6. Add the vegetables.
Stir in the peas during the final 5 minutes of cooking. If using cooked leftover chicken instead, add it near the end so it does not become dry.
7. Rest before serving.
Turn off the heat and leave the pot covered for 5 minutes. Fluff the rice gently with a fork, taste for seasoning, and finish with spring onions or parsley if desired.
💰 Make It More Budget-Friendly
Chicken thighs are often a better-value choice than chicken breast and stay juicy during longer cooking.
You can also stretch the meal by adding more carrots, peas, cabbage, sweet pepper, or other inexpensive vegetables.
If you have leftover cooked chicken, use it instead of starting with raw chicken. Simply add it during the final few minutes of cooking.
And if you do not have chicken stock, ordinary water plus a stock cube can still produce a tasty result.
