This simple pasta dinner combines spaghetti with a quick tomato, garlic, onion, and herb sauce. A little pasta water helps turn the sauce silky and coats every strand beautifully.
It is ideal for busy weeknights when you want something homemade without spending an hour in the kitchen.

Ingredients
400g spaghetti or any pasta you have
2 tablespoons vegetable oil or olive oil
1 medium onion, finely chopped
3–4 garlic cloves, minced
1 can chopped tomatoes or about 400g fresh tomatoes, chopped
1 teaspoon dried mixed herbs or oregano
½ teaspoon paprika
Salt and black pepper, to taste
½ teaspoon chilli flakes, optional
½ cup reserved pasta water
Grated cheese, optional
Fresh parsley or spring onions, optional

👩🍳 Easy-to-Follow Instructions
1. Get the pasta cooking.
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until just tender.
Before draining, scoop out about ½ cup of the pasta water.
2. Build the flavour.
While the pasta cooks, heat the oil in a large frying pan over medium heat. Add the onion and cook for 2–3 minutes until softened.
Add the garlic and cook for about 30 seconds. Be careful not to let it burn.
3. Make the quick tomato sauce.
Stir in the tomatoes, dried herbs, paprika, black pepper, and chilli flakes if using. Simmer for 5–7 minutes, stirring occasionally.
4. Bring it together.
Add the drained pasta to the sauce. Pour in a little pasta water and toss everything together until the sauce coats the pasta.
Add more pasta water, a tablespoon at a time, if the sauce seems too thick.
5. Finish and serve.
Taste and adjust the seasoning. Top with grated cheese, parsley, or sliced spring onions if you have them.
Serve immediately while hot.

You do not need premium ingredients to make this dish delicious.
Use store-brand pasta and canned tomatoes, choose dried herbs instead of fresh ones, and skip the cheese if it is outside your budget. You can also add inexpensive vegetables such as carrots, sweet peppers, spinach, cabbage, or frozen mixed vegetables.
For extra protein, stir in cooked beans, leftover chicken, sardines, tuna, or a fried egg.

That cloudy cooking water contains starch released from the pasta. Adding a small amount to your sauce helps it become smoother and cling to the pasta instead of sliding to the bottom of the plate.

For even more convenience, wash and chop vegetables such as carrots, peppers, and spring onions at the same time. Store them in small portions so you only take out what you need.
