🍽️ Your Daily Dish
There are some meals that quietly disappear from the table.
And then there are meals that make everyone stop talking for a moment because they're too busy deciding what to put on their plate.
Chicken shawarma belongs in the second group.
Picture a Saturday evening.
The chicken is sizzling in the kitchen, carrying the smell of garlic, cumin, paprika and warm spices through the house.
On the table, you've arranged bowls of chopped cucumber, tomatoes, lettuce, onions and herbs.
There's warm flatbread stacked on a plate.
Then comes the garlic sauce.
Suddenly, dinner isn't just dinner anymore.
It's an activity.
Everyone reaches for a piece of chicken, adds their favorite toppings, folds the bread and creates their own meal.
That's what makes homemade shawarma such a wonderful weekend choice.
It feels generous and impressive, but most of the work can be done before everyone sits down.
💬 Today's Table Talk
The best weekend meals aren't always the ones that require the most cooking.
Sometimes they're the meals that give everyone something to do.
You might have a family member who wants extra chicken.
Someone else wants more cucumber.
Another person skips the onions completely.
Someone wants plenty of garlic sauce.
And that's perfectly fine.
Instead of trying to create one perfect plate for everyone, you put all the ingredients in the middle of the table and let people build their own.
The result is less pressure for the cook and more interaction around the table.
That's the real appeal of a shawarma night.
The meal becomes part of the conversation.
🌯 What You'll Need
For the chicken
1 kg / 2.2 lb boneless, skinless chicken thighs
3 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon lemon juice
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon ground coriander
½ teaspoon turmeric
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon cayenne pepper, optional
For the garlic sauce
½ cup Greek yogurt
2 tablespoons mayonnaise
1 garlic clove, finely grated
1 tablespoon lemon juice
Pinch of salt
For serving
Flatbreads or pita breads
Lettuce, shredded
Tomatoes, diced
Cucumber, diced
Red onion, thinly sliced
Fresh parsley
Pickles, optional
Lemon wedges
👩🍳 How to Make It
1. Marinate the chicken
Place the chicken thighs in a large bowl.
Add the olive oil, garlic, lemon juice and spices.
Mix thoroughly so every piece is coated.
Cover and refrigerate for at least 30 minutes.
If you have more time, allowing the chicken to marinate for several hours gives the flavors more opportunity to develop.
2. Make the garlic sauce
While the chicken marinates, combine the Greek yogurt, mayonnaise, garlic, lemon juice and salt.
Taste.
Want it sharper?
Add another squeeze of lemon.
Want more garlic?
Add another small clove.
Cover and refrigerate until serving.
3. Cook the chicken
Heat a large skillet or grill pan over medium-high heat.
Cook the chicken in batches if necessary.
Avoid overcrowding the pan.
Cook until the chicken is browned on the outside and cooked through.
The exact cooking time will depend on the thickness of the chicken pieces.
For food safety, chicken should reach an internal temperature of 74°C / 165°F.
Let the cooked chicken rest for a few minutes.
Then slice it into thin strips.
🥗 Build Your Shawarma Table
This is where the weekend meal becomes fun.
Arrange everything in separate bowls:
Sliced chicken
Warm flatbreads
Lettuce
Tomatoes
Cucumber
Red onion
Pickles
Garlic sauce
Fresh herbs
Lemon wedges
Let everyone assemble their own wrap.
Spread the garlic sauce over the flatbread.
Add chicken.
Add vegetables.
Add pickles if you like them.
Finish with another little spoonful of sauce.
Fold.
Eat.
Repeat.
🏆 Kitchen Win: Cook the Chicken in Batches
One of the easiest ways to improve homemade shawarma is to avoid overcrowding the pan.
If too much chicken goes into the pan at once, the temperature drops and the chicken can release moisture instead of developing a good browned exterior.
Give the pieces enough space.
Cook in batches if necessary.
Kitchen Win: Once the chicken is cooked, let it rest briefly before slicing. This helps keep the meat juicy.
💡 Weekend Cooking Tip: Prepare the Toppings Early
You don't need to chop everything while the chicken is cooking.
Prepare the vegetables earlier in the day.
Wash and shred the lettuce.
Dice the tomatoes.
Slice the cucumber and onion.
Make the sauce.
Store everything appropriately in the refrigerator.
Then, when dinner approaches, your main job is simply to cook the chicken and warm the bread.
That means more time at the table and less time rushing around the kitchen.
🔄 Easy Substitutions
No chicken thighs?
Chicken breast can work, but be careful not to overcook it.
Want a vegetarian version?
Try:
Roasted cauliflower
Chickpeas
Halloumi
Mushrooms
Roasted eggplant
Use the same spice mixture to create the shawarma-style flavor.
No Greek yogurt?
Plain yogurt can be used for the sauce.
No pita?
Use:
Flatbread
Tortillas
Naan
Wrap bread
🌶️ Adjust the Spice Level
Shawarma doesn't have to be extremely spicy.
For a mild family version, leave out the cayenne pepper.
For more heat, add:
Cayenne
Chilli flakes
Hot paprika
Fresh chopped chilli
You can also keep the chicken mild and place hot sauce on the table so everyone can control their own heat level.
🥒 Don't Forget the Pickles
Pickles might look like a small addition, but they bring acidity and crunch that can balance the rich chicken and creamy sauce.
If you don't have pickles, try a few thin slices of cucumber tossed with lemon juice and a pinch of salt.
It gives the meal that same refreshing contrast.
🍋 Make It a Complete Weekend Feast
If you're feeding a crowd, add a few simple sides.
Easy options
Hummus
Couscous
Greek salad
Roasted vegetables
Potato wedges
Fresh fruit
Simple rice
You don't need all of them.
Two or three sides are more than enough.
The chicken and flatbreads remain the stars.
🧊 What to Do With Leftover Chicken
Don't let leftover shawarma chicken go to waste.
Use it the next day in:
Rice bowls
Salads
Sandwiches
Wraps
Pasta
Loaded fries
Breakfast omelettes
You can even freeze cooked chicken in an appropriate airtight container for later use.
