1 tbsp olive oil
2 tbsp butter

1 cup heavy cream

2 cups fresh spinach
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp paprika
Salt and black pepper
1 tbsp lemon juice
Fresh parsley, for serving

1. Season the salmon.
Pat the salmon dry and season both sides with paprika, Italian seasoning, salt and black pepper.
2. Sear the salmon.
Heat the olive oil in a large skillet over medium-high heat. Add the salmon and cook for approximately 3–4 minutes per side, depending on thickness. Transfer the salmon to a plate.
3. Start the sauce.
Reduce the heat to medium. Add the butter and minced garlic. Cook for about 30 seconds, just until fragrant.
4. Add the tomatoes.
Stir in the sun-dried tomatoes and cook for another minute.
5. Build the creamy sauce.
Pour in the stock and cream. Stir gently and allow the sauce to simmer for approximately 3–4 minutes.
6. Add the spinach.
Stir in the fresh spinach and cook until wilted.
7. Add Parmesan.
Stir in the Parmesan until incorporated into the sauce.
8. Return the salmon.
Place the salmon back into the skillet and spoon the sauce over each fillet.
