💬 Today’s Table Talk
The weeknight dinner that gives you flavour, protein and flexibility — without turning the kitchen upside down.
Some evenings call for a proper meal, but not a proper cooking project.
These honey-garlic chicken and chickpea bowls are designed for exactly those nights.
Tender chicken is quickly browned and coated in a glossy honey-garlic sauce. Chickpeas make the meal more filling, while rice and crunchy vegetables add freshness and texture.
Best of all, the whole dinner can come together in about 20 minutes when you have cooked rice ready to go.
And because everyone can build their own bowl, it's easy to adapt for different tastes.
🍯 The Easy Honey-Garlic Chicken Bowl
Serves: 4
Prep time: 8 minutes
Cook time: 12 minutes
Total time: About 20 minutes
🛒 Ingredients
For the chicken
500g boneless chicken thighs or chicken breast
1 tablespoon cooking oil
2 garlic cloves, finely chopped
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon lemon or lime juice
½ teaspoon paprika
Black pepper, to taste
For the bowls
1 can chickpeas, drained and rinsed
3–4 cups cooked rice
1 carrot, grated or thinly sliced
1 cucumber, sliced
1 bell pepper, sliced
A handful of lettuce or spinach
Spring onions, optional
Sesame seeds, optional
💰 Budget-friendly swap
Chicken thighs are an excellent choice for this recipe because they're flavourful and tend to stay juicy during quick cooking.
If chicken is expensive where you live, use less chicken and increase the chickpeas.
You can also replace part of the chicken with beans, lentils or tofu.
👩🍳 Easy Step-by-Step Instructions
1. Cut the chicken
Cut the chicken into bite-sized pieces.
Smaller pieces cook faster, making them ideal for a genuine 20-minute dinner.
Season lightly with paprika and black pepper.
2. Brown the chicken
Heat the oil in a large frying pan over medium-high heat.
Add the chicken in a single layer.
Cook for about 5–6 minutes, turning occasionally, until cooked through and lightly browned.
Avoid overcrowding the pan. If necessary, cook the chicken in two batches.
3. Make the honey-garlic sauce
Lower the heat slightly.
Add the garlic, honey, soy sauce and lemon or lime juice.
Stir for 1–2 minutes until the chicken is coated in a glossy sauce.
Watch the pan carefully because honey can caramelise quickly.
4. Add the chickpeas
Add the drained chickpeas.
Stir gently and cook for another 2–3 minutes, allowing them to warm through and pick up some of the sauce.
5. Build your bowls
Add warm rice to each bowl.
Top with the chicken and chickpea mixture, then add:
Carrot
Cucumber
Bell pepper
Lettuce or spinach
Spring onions
Sesame seeds, if using
Finish with a squeeze of lemon or lime.
🌶️ Easy Ways to Change It
Make it spicy
Add chilli flakes, fresh chilli or your favourite hot sauce to the honey-garlic mixture.
Make it Mediterranean-style
Replace the soy sauce with extra lemon juice, oregano and a little olive oil.
Serve with cucumber, tomato and yogurt.
Make it extra vegetable-heavy
Add cabbage, broccoli, spinach, peas or leftover roasted vegetables.
This is also a great way to use vegetables that are sitting in the refrigerator waiting to be used.
🏆 Kitchen Win: Make Your Rice Work Harder
Cook extra rice whenever you have the time.
Once properly cooled and refrigerated, leftover rice can become the foundation for several quick meals.
Use it for:
Chicken bowls
Fried rice
Rice and beans
Burrito bowls
Vegetable rice
Curries
Instead of starting from scratch every evening, you only need to prepare the main protein and a few fresh ingredients.
That's a small habit that can save both time and money.
🍳 Kitchen Tip of the Day: Brown Before You Sauce
Want better flavour from a quick chicken dinner?
Don't add the sauce immediately.
Give the chicken time to develop some colour first.
Think:
Brown → season → sauce → glaze.
This creates more flavour while keeping the cooking process simple.
And once honey goes into the pan, reduce the heat slightly so the sauce becomes glossy without burning.
💡 Smart Cooking Tip
Use the “base + protein + crunch” formula.
When you're tired and don't want to follow a recipe, remember:
Base: rice, pasta, potatoes, couscous or grains.
Protein: chicken, eggs, beans, chickpeas, lentils or tofu.
Crunch: cucumber, cabbage, carrot, peppers, nuts or seeds.
Add a quick sauce and you have the foundation of a meal.
This formula is particularly useful when you're trying to use up small quantities of ingredients before they go to waste.
