When the day has been long, dinner should not feel like another full-time job. This simple one-pot meal combines tender chicken, fluffy rice and colourful vegetables in one pan, giving you a satisfying homemade dinner without a pile of dishes afterwards.

One-Pot Garlic Chicken & Veggie Rice

This is the kind of meal that earns a regular place in your weeknight rotation. You get protein, carbohydrates and vegetables in one comforting dish, while the cooking process stays simple.
What You'll Need
500g chicken thighs or boneless chicken breast, cut into bite-sized pieces
2 cups long-grain rice, rinsed
1 medium onion, chopped
2 cloves garlic, minced
1 cup mixed vegetables such as carrots, peas and sweetcorn
1 tablespoon tomato paste or 2 tablespoons blended tomatoes
2 tablespoons cooking oil
3½ cups chicken stock or water
1 teaspoon curry powder
½ teaspoon dried thyme
½ teaspoon paprika
Salt and black pepper to taste
1 stock cube, optional
Fresh spring onions or parsley, optional
How to Make It
1. Season the chicken.
Place the chicken in a bowl and season with a little salt, black pepper, paprika and curry powder.
2. Brown the chicken.
Heat the oil in a large deep frying pan or pot over medium-high heat. Add the chicken and cook for about 4–5 minutes, turning occasionally, until lightly browned. It does not need to be completely cooked yet.
3. Build the flavour.
Add the chopped onion and cook for 2 minutes. Stir in the garlic and tomato paste and cook for another minute.
4. Add the rice.
Pour in the rinsed rice and stir for about 30 seconds so the grains become coated with the seasoned mixture.
5. Add the liquid.
Pour in the chicken stock or water. Add the thyme and stock cube if using. Stir once, then bring everything to a gentle boil.
6. Cover and cook.
Reduce the heat to low, cover the pot tightly and simmer for about 15 minutes.
7. Add the vegetables.
Scatter the mixed vegetables over the rice. Cover again and cook for another 5–7 minutes, or until the rice is tender and the liquid has been absorbed.
8. Rest before serving.
Turn off the heat and leave the pot covered for 5 minutes. Fluff the rice gently with a fork, then garnish with spring onions or parsley if desired.
